The promotion of the excellence of our territory also passes – and above all! – from the eno-gastronomic proposal. Known and loved in Italy, the dishes of the Apulian tradition represent the real visiting card of our region in the world. With this conviction, the Nikolaos Foundation dedicates the opening event of its annual program to the kitchen, with the usual “PUGLIA A TAVOLA Award”.

Established for the first time in 2013, the PUGLIA A TAVOLA project is aimed at the excellence of the Apulian gastronomic and tourism sector. In January, at a gala held in collaboration with the Istituto Professionale Alberghiero Armando Perotti in Bari, awards are given to the restaurant characters who have greatly contributed to strengthening the image of the territory, increasing its tourist appeal.

Leading the team, in the kitchen, chef and professor Antonio De Rosa, who every year offers a rich and elaborate menu, according to a guiding theme: from traditional dishes to contaminations in a modern key, from the colors of health, to old recipes Imperial Rome.

Thanks to the passion of his head teacher and all his staff, the usual Gala is hosted at the school where students put into practice the studies addressed to offer an evening of haute cuisine, from the preparation of the room, to the preparation of brought to the kitchen, serving the table, the students of the Perotti test themselves demonstrating the excellence of the training offered by the Bari Hotel Institute.
